Stuffed meatballs are highlight of new lounge menu

One of the most popular items on our lounge menu is a relative newcomer. Matthew Nolot, Executive Chef of our Fort Wayne location, invented this great new dish about 18 months ago as part of a fundraiser for Erin’s House for Grieving Children, an organization that supports children who have experienced the death of a loved one. Matt’s recipe is for stuffed meatballs. He makes them from a blend of ground prime beef, lamb and pork mixed with olive oil, garlic, basil and chili pepper. Each meatball is hand-formed formed around a center of mozzarella, and the entire dish is coated in a classic tomato sauce with crushed tomatoes, olive oil, garlic and red wine.

You’ll find the meatballs on our new lounge menu as Eddie’s Meatballs.

Matt’s one of the longest-serving Eddie Merlot’s staff members. He joined us in 2003 at our original location in Fort Wayne, Ind. We rely every day on his expertise that comes from 25 years of experience in the restaurant world.
