We’re celebrating our 10th anniversary with a wonderful menu of great options that let you enjoy this landmark occasion with us. We thought it was fitting to tell you more about our background, and how our owner, Bill Humphries, has built Eddie Merlot’s from a single location in Fort Wayne, Indiana, to a five-location group of restaurants with three new locations in the works and soon to open (and future plans for more). This is in a time when few restaurants are expanding. We’re seeing strong sales from our new locations, particularly in Louisville, indicating to us that there is a demand for great food and exceptional service.
Bill believes in quality over quantity. Since he founded Eddie Merlot’s, it’s not been about having the most restaurants, but about bringing Eddie Merlot’s to places where diners would truly appreciate what we have to offer. We’ve most often built our own locations from the ground up so that we can create exactly what we think a restaurant should be: elegant, spacious and comfortable. Our Louisville location is a departure from that. We chose a downtown location since that’s the area of Louisville that’s seeing the strongest growth and the most demand. It’s proven to be successful, drawing record crowds for us and fitting right in to Louisville’s robust restaurant scene.
What also separates us from a lot of other restaurants is we have options, and lots of them. We have 17 different sides, six salads, 12 appetizers and 12 different ways to enhance your steaks – not to mention 12 different individual steaks and three larger cuts that are meant to be shared. Then there’s chicken, pork chops, lamb chops and seafood. We could go on – but you get the idea. And we’re never in a hurry to take your order. Look over the menu. Take your time. Ask questions. What’s the point of having a huge menu if we won’t give you the time to savor all the options?
Our service, too, is unparallelled. You’ll know your server’s name and find them personable as well as knowledgeable about the entrees, sides and options and our extensive (and incredible) wine list. We train our staff extensively on the art of entertaining, and want them to understand that you are our guest.
We’re expanding because Bill accepts nothing less than the best. He’s established Eddie Merlot’s as a leader in fine dining. We’re expanding because our customers appreciate great food, and are loyal to us. We’re expanding because of people like you.
