Director of operations Bruce Kraus, Fort Wayne Executive Chef Matt Nolot and Indianapolis Executive Chef Tony Dee went to the Veggie U Food & Wine fundraiser recently and brought home some terrific accolades.
Chef Matthew Nolot is famous in his own right on two accounts: his smoked Bologna log and his file cabinet smoker. The Bologna log was a hit with the chef group including Robert Irvine, Claire Robinson, Johnny Iuzzini, Lee Anne Wong, Jonathon Sawyer, Amanda Freitag and Madison Cowan. The dish, Beet Sangria Smoked Pork Belly with Beet Pickled Oysters garnished with Summer Vegetables and Flowers, was created by the Eddie Merlot’s team, including Tony, Matt and Matt Strabbing (friend of Eddie Merlot’s).
Eddie Merlot’s was also recognized by Veggie U for raising $8,000 so far for the Veggie U program, which gives kits to teachers for classroom use that educates children on the health benefits of eating veggies.
